About the Book

Baker & Cook started out as a single bakery food store in a quiet suburban neighbourhood in Singapore, and within a short span of five years, has expanded to ten outlets across the island. Today, the chain has spread to Manila and will soon be in Saudi Arabia, Abu Dhabi and India.

In this book, founder Dean Brettschneider shares the success story in full and candid detail. He also provides expert advice on bread- and pastry-making techniques, and tops it off with more than 60 recipes for breads, cakes and other bakery-related foods. Whether you’re a fan, someone looking to understand the business, or an avid baker, this book promises something for everyone.

“It’s my attempt at documenting the life and times of the Baker & Cook business,
aged five, complete with recipes, hopefully without it reading like the
gushing of an oversharing parent gripped by terminal hubris.”

—Dean Brettschneider, Extract from the “Introduction”

“The book uncovers the brand story, recipes, and life behind the inspirational
Dean Brettschneider, his successful artisan bakery and food store.
His best new recipes with extensive detailing on technique and ingredients
makes this book an essential and accessible resource for all bakers.
It is an honest book that reveals Dean’s moving stories in building
Baker & Cook, and offers an intimate glimpse of the incredibly difficult work
of a business owner. Baker & Cook captures perfectly the passion, vision,
and dedication of Dean which I’ve witnessed as an established baker,
successful entrepreneur and brand builder.”

—Andre Chiang, Restaurateur, Chef & Entrepreneur

“This book should rightly be named Baker & Cook & Entrepreneur! Dean not
only shares the secret to his sourdough but aspiring entrepreneurs might just
discover within its pages, the mother starter they need for global business success!”

—Dr Leslie Tay, ieatishootipost
